The objective of foliage management is to achieve best conditions for healthy, high-quality grapes.
After trimming, selection is the first opportunity to regulate yield. Not only the desired yield, but also the strength of the plant will be influenced by the number of shoots. Then follows the binding in loops, side-shoots will be clipped. This ensures an optimum photosynthesis of the leaves. The so-called topping prevents the foliage from casting shadow on the plant.
The ideal time for the thinning-out of grapes is right after colouring, i.e. end of July / beginning of August for Chianti. At this point grapes are fully grown and begin to collect sugar. The fewer grapes, the higher the sugar content. At the beginning of September, leaves near the grapes are removed. This improves ventilation and evaporation of water around the grapes, helping to prevent Botrytis cinerea.
